- 3 boiled Potatoes
- 2 tbsp Mustard oil
- 1/2 tsp Hing (Asafoetida)
- 1 tsp Mustard seeds (Rai)
- 4-5 Kadhi Patta
- 1/4 cup Onions (finely chopped)
- 1 tbsp Ginger Garlic Paste
- 1/2 tbsp Green Chilli (crushed)
- as required Kharda (ingredients are mentioned below)
- as per taste Salt
- 1/2 (1 tsp) Turmeric powder
- 1/8 cup Coriander leaves (Dhaniya)
- 2 tsp Lemon juice
- 1/2 tsp Amchur powder
- 1 tsp Garam masala
- For masala
- 8-10 Garlic Cloves
- 1 1/2 tbsp Red chilli powder
- 2 tsp White Sesame seeds
- 1 cup Grated dry coconut
- 2 tsp Peanuts
- to taste Salt
- For Gram flour paste
- 1 bowl Gram flour
- as required Water to make ribbon consistency batter
- 1/2 tsp Baking Soda
- to taste Salt
- 2 tsp Red chilli powder
- 1/2 tsp Baking powder
- For roasting Pav
- 1 tbsp Butter
- as required The dry chutney we made
- as per taste Salt
- as required Pav
- For Kharda
- 7-8 Garlic cloves
- as required Ginger - A small piece
- 5-6 green chilli ( you can adjust the spice as per your taste
- as taste Salt
- 1 little water
- For Thecha (spicy green chutney)
- 7-8 garlic cloves
- 1 handful Coriander leaves
- as per your taste Green chilli
- 1/2 inch Ginger
- as per your taste Salt
- as required Water (it should not be so think or too thick)
- For assembling
- 1 Onions (sliced)
- as required Thecha we made
- as required Fried Green chilli
Steps to make Mumbai special Vada pav
- First grate all the boiled potatoes. You can mash it with your hands too but sometimes there are chances that lumps will be formed, so better grate it.
- Now we will make Kharda.
Now in the mixer grinder, add 7-8 garlic cloves, ginger, green chilli, salt and a little water. Grind it well and it's ready. - Now take a tawa and add 2 tbsp Mustard oil and let it heat. Once the oil is heated add Mustard seeds and Kadhi Patta. Let it sputter. Add Hing (Asafoetida).
- Now add Onions and let it become slightly translucent and add Ginger Garlic paste and Green chilli.
- Now lower the flame and add all the spices mentioned above in the ingredients section. You can check it there. Add Kharda, salt and lemon juice as per your taste too. Combine everything well.
- Finally add the grated and boiled potatoes in it and combine everything well. Our filling is ready.
- Now we will make Thecha or Spicy Green chutney. For that we will need 7-8 garlic cloves, ginger, green chilli, salt, handful of fresh coriander leaves and water as required.
- For making the secret Vada pav chutney
- First dry roast sesame seeds and peanuts. Then turn off the gas and add Coconut and let it rest for 5 minutes and let it cool.
- In the same pan add 1 tsp Sesame oil and heat it. Add garlic in it and saute.
- Now comes the main ingredient, make the gram flour (besan) batter and make chura or random add little batter and make boondi.
- Let all the ingredients cool down, add Red chilli powder and salt and coursely grind it.
- Now let's fry the Vada. Shape the vadas after cooling the mixture in the refrigerator for 10 minutes. Add the vadas in the besan batter and fry them on low heat until crisp and golden brown.
- Now we will toast the Pav or Bun. For that we will need butter and the dry chutney we made. Cut the bun into two parts.
- Toast the bun with the pressure of your hands.
- Now let's assemble the Vada Pav. First take the toasted buns and add the dry chutney on one part of bun and green chutney on the other part of the bun and add the Vada and close the Vada Pav with other part of the bun.
