  2. 200 grams boiled baby potatoes
  3. 1 medium onion,
  4. 2 medium tomatoes
  5. 1/2 tsp cumin seeds,
  6. 1/4 tsp turmeric powder,
  7. as per taste salt
  8. 1 tbsp ginger garlic paste
  9. 1/2 tsp coriander powder,
  10. 1/2 tsp garam masala powder,
  11. 1/2 tsp red chilli powder,
  12. 1/2 tsp sugar
  13. 1/2-3/4 cup milk
  14. 1 tbsp butter
  15. 2-3 tbsp oil

Steps to make Aloo Palak

  1. Assemble all ingredients, make purée of tomatoes.
  2. Fry boiled potatoes till golden yellow / brown and keep aside.
  3. In pan add oil, then add cumin seeds and let it splutter for few seconds, then add ginger garlic paste and sauté till ginger garlic turns golden brown under medium flame. Then add chopped onion and sauté till golden brown.
  4. Add tomato purée and fry / cook for 2-3 minutes till water evaporates to some extent, then add turmeric, red chilli powder, coriander along with salt and fry till spices leaves oil.
  5. Then add spinach purée and cook under medium flame for 2-3 minutes, then add milk + garam masala and cook for 2 - 3 minutes.
  6. Then add fried potatoes, mix well and cook for 1 -2 minutes by covering and simmer for another 2 minutes by adding sugar. Keep it stand by for 2-3 minutes by adding butter.
  7. Now Aloo Palak is ready to serve.
