- For making red paste : Firstly, soak dry red chillies in warm water and drained. Combine all the ingredients like garlic, onion, ginger, lemongrass salt, green coriander, cumin seeds, coriander seeds, water and blend in a mixer to a smooth paste.
- For making red thai curry : take a mixing bowl add coconut milk and corn flour and combine well.
- Heat oil in the pan, add red curry paste and saute it for 2-3 minutes. Further mix onion, boiled corn, bell peppers, carrots, french beans and add salt. stir well all the ingredients for 4-5 minutes.
- Now, add coconut milk -cornflour mixture and simmer for 2 minutes. Afterwards add soy sauce, black pepper powder and again simmer it for 10 minutes till curry thickens. garnish it with basil leaves, coriander leaves. Serve it with steamed rice.
