Ingredients and spices that need to be Make ready to make Chhole Bhature:

  1. 125 gm White Chhole Chana boiled
  2. 2 cup Maida All-purpose flour
  3. 1 tsp thin suji
  4. 3 big sized Tomatoes
  5. 2 big Onions
  6. 5-6 garlic cloves
  7. 1-2 Green chilli paste
  8. 1 small inch of ginger paste
  9. 1 tsp garam masala
  10. 1.5 tsp kashmiri red chilli powder
  11. 1/2 tsp turmeric powder powder
  12. 1 tsp coriander powder
  13. as required Oil
  14. 1 tsp Cumin seeds
  15. 1 Bay leaf and red dry chilli
  16. as per taste Lemon juice
  17. to taste Salt
  18. as required Coriander leaves also optional
  19. 1 tsp Kasuri methi

Steps to make Chhole Bhature

  1. Soak the Chana overnight or 5-6 hrs minimum.
    Now boil the Chana, add salt and give 4-6 whistle to it.
    You can tie tea powder in small cotton cloth and keep aside the Chana while cooking in pressure cooker, it will give nice colour to the Chhole
  2. Chopped the tomato and onions saute in the kadhai and then cool down them completely next grind it in the grinder and make nice gravy
  3. Take the pan add oil and Cumin seeds, bay leaf and red dry chilli now pour the gravy first and boil them for a few minutes
  4. Now add all the spices salt as per gravy- turmeric powder,red kashmiri powder, coriander powder garlic, ginger and chilli paste to them again saute for 2-3 minutes or till oil releases from the gravy
  5. Now add Boiled Chhole to the gravy and give a nice mix add Garam masala, lemon juice and lastly Kasuri methi and cook them for 2-5mins
  6. The Chhole should must have thick texture to have with Bhature.
  7. For Bhature :Take the Maida or All-purpose flour and 2tbsp oil, salt, one tsp of thin suji and bind medium hard dough and rest for 15-20mins minimum
  8. Now take a small portion of dough and start rolling the Bhature to medium thin texture round shape and dip fry them and serve them hot with Chhole,Salad,Papad, lassi or Buttermilk
