An extremely popular Gujarati street food snack recipe made with indian pav bread and stuffed with a unique blend of masala. the recipe looks very similar to the maharashtrian vada pav snack but has a combination of taste and flavours in it. generally, dhabeli snack is consumed as an evening snack with a cup of tea or coffee, but can also be consumed for morning breakfast and noon lunch.

- 🎯 For Spicy Masala Peanuts :--
- 100 gram salted peanuts
- 1 tsp oil
- 1 tsp red chilly powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- 1/2 tsp black salt
- 1 tsp sugar powder
- 1/4 tsp black pepper powder
- 1/2 tsp dry mango powder
- 🎯 For Dates, Tamarind and Jaggery chutney :--
- 1/2 cup seedless dates
- 1/2 cup seedless tamarind
- 1 liter water
- 1 cup jaggery
- 1/2 tsp salt
- 2 tsp kashmiri red chilly powder
- 1/2 tsp garam masala
- 1 tsp coriander - cumin powder
- 🎯 For Green Chutney :--
- 1.5 cup green coriander leaves
- 1 inch ginger piece
- 3-4 no. Green chillies
- 4-5 no. Garlic cloves
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 no. Lemon juice
- 2 tsp water
- 🎯 For Dabeli Filling :--
- 400 gram boiled and mashed potatoes
- 1/2 cup water
- 50 gram oil
- 3-4 tbsp Dabeli masala
- 1 tsp red chilly powder
- Salt as per taste
- Pomegranate seeds as per required
- Besan Sev as per required
- Spicy masala peanuts
- Green grapes as per required
- Green coriander leaves as per required
Instructions to make Kutchi Dabeli (Gujarati Style)
- First wash the potatoes, add salt to the cooker and boil on medium gas for 3 to 4 whistles. Then Peel a squash, grate it and mash it. Now add green coriander, ginger, green chillies, garlic, sugar, salt, lemon juice and water in a mixer jar for green coriander chutney.



- Now peel two parts of salted peanuts and make two parts to make hot masala peanuts. Now heat oil in a pan. Once the oil is hot, add the peanuts and cook on low heat for 1/2 minute. Then add red chilli powder, turmeric powder, garam masala, black salt, sugar, black pepper powder and amchoor powder(Dry mango powder) and mix everything. Now turn off the gas.



- Now heat water in a pan to make dates and Tamarind sauce. Add to this dates and Tamarind, mix it and let it heat up slightly. Now add this jaggery and let it boil for 15 to 20 minutes. Now when this mixer thickens, turn off the gas, cool it and put it in the mixer and grind it.



- Now add dabeli masala in 1/2 cup of water and mix well. Now heat oil in a pan, add leftover spices dipped in water and let the mixer boil. Then boil this mixer. Now add red chilli powder, add salt and boil it for a while, then add potato and mix well. Now add dates and Tamarind Chutney and mix. Then spread this stuffing on a plate and press the spicy masala peanuts seeds. Now add pomegranate seeds, green grapes, green coriander and press everything.



- Now cut the dabeli's pav into the tortillas, spread the green chutney in it, spread the dates, jaggery, tamarind chutney, fill it with potato stuffing, dip it well, press the masala peanuts seeds, fill it with onion and press it properly. Now apply butter on both sides of the pan and fry on both sides.



- Now take it out Dabeli in serving plate and serve it on the top of the besan sev it by putting the masala peanuts, pomegranate seeds on the besan sev. Now this delicious and spicy kutchi dabeli is ready to eat.
