Today I have made tasty delicious Amritsari Aloo Kulcha.

- For making Dough -
- 2 cups refined flour
- 1 cup curd
- 2 tbsp oil
- Salt to taste
- 1/2 tsp beaking soda
- 1 tbsp baking powder
- 1 tbsp powdered sugar
- 1 tbsp kalongi (Nigella)
- 2 tbsp chopped coriander leaves
- 3 tbsp butter
- For filling -
- 2 boiled, mashed potatoes
- 2 tbsp chopped onion
- 1 tsp chaat masala powder
- 2 tbsp chopped coriander leaves
- 1 tsp coriander powder
- 1 tsp roasted cumin powder
- 2 green chillies chopped
- 1 tbsp grated ginger
- 1 tsp red chilli powder
- 1 tsp dry mango powder
- Salt to taste
Instructions to make Amritsari Aloo Kulcha
- Take a bowl add all ingredients of dough mix everything gently, make a soft dough by adding little water. Dough should be soft than roti atta, apply oil on the surface of the dough, cover the bowl and rest it for 2 hours.
Till such time prepare the aloo stuffing.


- Making stuffing -
Take a bowl, take boiled and shredded potatoes and all ingredients of stuffing and mix everything well, and make small round shape. Stuffing is ready.


- After 2 hours, mix again dough so that it gets smooth. Now take out a small portion of dough and flatten the dough use rolling pin to make it little even from all sides.


- Then fill stuffing and close the dough and dust some dry maida and flatten the dough, then sprinkle some Nigella seeds and coriander leaves and little press it for stick them. Now apply little water on the other side.

- Heat up the tawa on medium heat, place the kulcha, water side on the tawa and cook it. Now flip the tawa so that fire can touch the upper part of the kulcha and cooks like a tandoor as shown in fig.



- Aloo kulcha is ready, apply some butter on top and Enjoy!!!
