  2. 2 cup refined flour
  3. 1/4 cup oil
  4. 1 tsp salt
  5. For kachauris stuffing
  6. 3-4 boiled and mashed potatoes
  7. 1 tbsp fennel seeds coarsely ground
  8. 1 tbsp coriander seeds coarsely ground
  9. 3 tbsp gram flour (roasted)
  10. 2 tbsp homemade kachauri masala-
  11. 1 tsp baking soda
  12. For Sabzi
  13. 4 potatoes boiled and crushed with hands
  14. 1 tsp cumin seeds
  15. 1 inch ginger grated
  16. 2 green chillies finely chopped
  17. 2 tomatoes chopped
  18. 1 tsp red Chilli powder
  19. 1/2 tsp turmeric powder
  20. 1 tsp coriander powder
  21. 2 bay leaves
  22. 1 tbsp amchur powder
  23. 1/2 tsp black pepper powder
  24. 1/2 tsp black salt
  25. 1/2 tsp garam masala powder
  26. 1/4 tsp asafoetida
  27. As required Coriander leaves chopped
  28. as per taste Salt
  29. 3 tbsp oil
  30. as per requirement Water

Steps to make Stuffed Kachauri with aloo sabzi

  1. In a mixing bowl take refined flour, and add salt and oil. mix well. add little by little water. knead it for 5-6 minutes and make a soft dough. cover and keep aside for 15 minutes.
  2. For prepared the stuffing in a bowl take potatoes add gramflour and all spices mentioned above mix all very well. add salt and baking soda and mix well. keep aside.
    Take the dough to knead again for 2-3 times and make medium size smooth balls from it.
  3. Take one ball press from the edges with fingers and fill some stuffing in the middle and bring the edges of the dough together and join them at the center. Excess dough can be pinched off and removed. flattened with a hand and roll gently with a rolling pin to get a medium-thickness kachori.
  4. Keep them covered under a moist muslin or cotton cloth, so that they do not dry up.
    Heat oil in a kadhai, add kachauris, and deep fry them till they turn golden. Fry all kachauris.
  5. For making sabzi in a kadhai add oil when it heated add cumin seeds saute 30 seconds, add ginger saute for a while.add chopped tomatoes and green chillies, add salt mix and cooked for 2-3 minutes.
  6. When tomatoes turn soft add coriander powder, turmeric powder, and red chili powder. Crushed bay leaf. add 1/4cup of water and let it boil. add mashed potatoes and mix.
  7. Add 2cups of water and boil it for 4-5 minutes on medium flame then add amchur powder, pepper powder, and garam masala powder. Mix and let it boil. turn off the flame.
  8. After 2 minutes add asafoetida and chopped coriander leaves.mix well. Serve the sabzi with hot kachauris.
    (Prepared sabzi first then fry the kachauris)
