This snack dish in India is called by various names like panipuri ,golgappa,gupchup, puchka and many more. Crispy fried puffed flatbread is stuffed with spiced potatoes,black chickpea along with sweet tamarind jaggery water and spicy chilli Mint flavour water.
Ingredients and spices that need to be Prepare to make Mumbai's Golgappa:
- 20 nos puris(readymade)
- For potato stuffing -
- 4 boiled potatoes
- 1 finely chopped onion
- 1/4 cup chopped coriander leaves
- Salt to taste
- 1 tsp red chilli powder
- 1/2 tsp cumin powder
- 1/2 tsp chaat masala powder
- For chana stuffing (black chickpea)-
- 1 cup soaked and boiled chickpea
- Salt to taste
- 1/2 red chilli powder
- 1/2 cumin powder
- For spicy mint water-
- 1 cup fresh mint leaves
- 1 cup fresh chopped coriander leaves
- 1 lemon
- 1 green chilli
- 1/2 inch ginger
- Salt to taste
- 1/2 tsp black salt
- 1 tsp chaat masala powder
- For sweet water-
- 1/2 cup soaked dates
- 1/4 cup jaggery
- 1 tbsp tamarind paste
- Salt to taste
- 1/4 tsp black salt
- For garnishing and other stuffing -
- 1/2 cup nylon sev(readymade snacks)
- 1/2 cup Spicy boondi (readymade snacks)
Instructions to make Mumbai's Golgappa
- First prepare potatoes stuffing - for this, wash then boil potatoes till turns soft

- Peel off then transfer the potatoes in a mixing bowl, mash with a masher
- Now add all above ingredients which are mentioned above for potato stuffing, combine well and keep aside


- For chana stuffing (black chickpea)- soak 1 cup of chana overnight or minimum 4hrs
- Next day add salt and turmeric powder and cooked in a pressure cooker till turns soft
- After cooling drain all the water from cooked chana,add salt,red chilli powder and cumin powder

- Combine everything well and keep aside
- For preparing spicy mint water- take a blender jar add mint leaves and coriander leaves



- Also add all ingredients mentioned above, blend to a smooth paste
- Add cold water to adjust the taste and consistency
- Spicy mint water is ready
- Now for sweet water - soak dates for 1hr



- Take a blender jar add dates, jaggery and tamarind paste and salt
- Blend to a smooth paste
- Add water to adjust taste and consistency and keep aside
- While serving, take a puri,make a small hole on top, stuff spiced potatoes,chana,sev and boondi



- Fill puri with spicy and sweet water according to your taste and enjoy Golgappa (or panipuri)
