Ragda patties is popular street food of mumbai and Gujarat. It is made using white peas, mashed potato tikki with few spices. Also it's garnish and serve it with sev, onion, tomato,curd and spicy-tangy chutneys. It is similar like chole Tikki.
Ingredients and spices that need to be Take to make Ragda patties:
- 1 cup white peas
- 3 cup water for soaking white peas
- For making ragda:
- as needed Boiled white peas
- 2 tbsp oil
- 1 tbsp cumin seeds
- 2-3 pinches asafoetida
- leaves Few curry
- 1 tbsp ginger garlic paste
- 1 tbsp cumin coriander powder
- 1 tsp red chilli powder
- 1 tsp turmeric powder
- 1 tbsp salt
- 1 tsp lemon juice
- 1 tsp garam masala/kitchen king masala
- 2-3 pinches kasoori methi
- as required Green coriander
- For making patties :
- 4-5 boiled mashed potatoes
- 1 small cup thick poha
- as required Water for soaking poha
- 1 tsp ginger-green chilli paste
- 1 tsp salt
- 1 tsp turmeric
- 1/4 aamchur powder
- as required Green coriander
- Garnishing :
- as required Sev
- 1 Chopped onion
- 1 Chopped tomato
- As required Curd (optional)
- as required Green chutney
- as required Tamarind date chutney
Steps to make Ragda patties
- Firstly, Wash and soak white peas for 6-7 hours. Now, boil it in pressure cooker for 5-6 whistle. Also, add little turmeric and salt in peas.
- For making ragda : heat oil in pan add oil, cumin seeds, asafoetida, curry leaves once it crackle then add turmeric, red chilli powder and cumin coriander powder mix well all the ingredients.
- Further add boiled peas & combine well. After few minutes add lemon juice, kasoori methi, garam masala/kitchen king masala and finally mix green coriander.
- For making patties: boil potatoes (make sure you have to boil potatoes before 2-3 hours of making patties.). Take a small bowl, add thick poha and water for soaking it.after few minutes drain water.
- Mix soaked poha in mashed potato. Mix salt, ginger-green chilli paste, turmeric, aamchur powder etc. combine well all the ingredients.
- Make a equal balls and gently press it in center. Heat oil in non-stick pan put patties and shallow fry it from both sides.
- Garnishing : pour ragda in the plate put patties over it. Again, pour ragda. Finally, garnish it with Chopped onion, tomato, sev, curd and chutneys.
