  11. For tempering potato masala
  12. 1+1/2 tbsp oil
  13. 1/2 tsp mustard seeds
  14. 1/2 tsp cumin seeds
  15. 1/2 tsp fenugreek seeds
  16. 1/2 tsp hing
  17. 8-10 curry leaves
  18. For Making batter for vada
  19. 1 bowl gram flour
  20. 1/2 tsp red chilli powder
  21. 1/2 tsp turmeric powder
  22. 1/2 tsp hing
  23. As per taste Salt to taste
  24. As required Water
  25. As required Green chutney ingredients
  26. 1/4 cup salted peanuts
  27. 1 bowl coriander
  28. 10 garlic cloves
  29. 5 green chilies
  30. 1/2 lemon juice
  31. As Per Taste Salt to taste
  32. As Required Ice cube
  33. As Required Water for grading chutney
  34. For assembling vadapav-
  35. 6 pav
  36. As Required Dry garlic chutney
  37. As required Oil/butter to roast vadapav
  38. As Required Tomato ketchup for serving

Instructions to make Maharashtra famous vadapav

  1. To make green chutney
  2. Take all ingredients under the green chutney section in a mixer jar and grind it to a fine paste. Keep smooth and somewhat thin consistency. Keep aside.
  3. For making potato masala
  4. Peeland mash boiled potatoes. Add salt, green chili, coriander, red chilli powder, turmeric, lemon juice, and hing. Do tempering by using ingredients under the tempering section.
  5. Mix well everything. Make balls for vada, according to the size of your pav.
  6. In a bowl take gram flour. Add salt, and red chilli powder, and hing mix well. Now add water to make a thick batter. The batter should be of dropping Consistency so it will well coats the vada.
  7. Heat oil in a pan. Put some potato vada in the batter deep properly. Then put it into oil and deep fried it till light pink in color. Do fry all the vadas in batches.
  8. Assembling vadapav.
  9. Heat a griddle or nonstick pan. Add in oil/butter. Make two halves of pav. In oil add garlic chutney, saute it. (Very low flame other wise chutney will be burnt). Put two halves of a pav roast properly on both sides. Put vada on one side, cover with other half of pav. Press gently. Serve hot with green chutney and ketchup. Enjoy.
