  1. To make kebab
  2. Heat 1 tsp oil and temper 1 tsp cumin seeds to a pan
  3. When cumin seeds starts crackling, add in minced ginger-garlic and saute for few seconds. Also add in 1 tbsp green chutney.
  4. Then add in green peas and blanced and chopped spinach.
  5. Stir well, add in salt and chat masala.
    Cover and cook in medium heat until peas become soft and extra water evaporates from spinach.
  6. Remove from heat and mince them after cooling.
  7. Mix with 1 boiled and mashed potato and chena.Check the seasoning, add salt and chat masala if required.
  8. Divide into 4-5 parts and screwed in wooden sticks to give them long shape.
  9. Heat 1 tsp ghee to a non-stick pan and cook the kebabs in all sides for about 10 minutes or until light golden marks comes on them.
  10. Harabhara kebabs are ready now.
  11. Method to make broth
  12. Peel carrot and grate it.
    Freshly take out juice from oranges.
  13. Heat 1 tsp cooking oil and add in crushed garlic and green chilli.
  14. When raw smell of garlic and chilli goes off, add in grated carrot.
  15. Stir well and then pour in orange juice.
  16. Add in salt, sugar and chat masala.
    Mix well, cover and cook in medium low heat for about 5-6 minutes.
  17. Remove from heat and strain with a strainer to get clear broth.
  18. Squeeze the pulp to take all the juices.
    You will get a little tangy and sweet(chatpata) broth.
  19. Place cooked plain rice at the centre of a serving dish with the help of a ring mould.
  20. Reheat the broth and pour to the sides of the dish.
  21. Lastly place harabhara kebab at the top of rice.
