- 1.5 cup boiled rice
- 1.5 Tbsp fresh lemon juice
- 1.5 Tsp grated ginger
- 1/3 Tsp turmeric powder
- as per taste Salt
- 1.5 Tbsp raw peanuts
- 5 raw cashews
- 6-8 curry leaves
- 1/2 Tsp mustard seeds
- 1 Tsp chana daal
- 1 Tsp urad daal
- 2 dry red chillies
- 2 green chillies slit
- 1 pinch hing
- 1 Tbsp ghee/butter
Steps to make Lemon Rice
- Heat ghee/butter/oil in a wok. Roast raw peanuts and cashews first and set aside.



- To the rest of the fat add mustard seeds and let them crackle. Further, add dry chillies and both the daals.



- Then drop curry leaves and saute for half a minute.

- Now add hing, green chillies and grated ginger. Saute for a minute. Now add curry leaves and roast till they are aromatic.

- Further add salt and turmeric powder. Fry for some seconds and mix the lemon juice on low flame.


- Add the cooked rice and mix well. Garnish with roasted peanuts and Cashews and serve the delicious lemon rice.
