Today I have made hariyali pav bhaji, and also baked pav at home. In this recipe I have added fresh spinach and green coriander in bhaji for green colour. So make this hariyali pav bhaji in winters for goodness of veggies.

Ingredients and spices that need to be Make ready to make  Hariyali Pav Bhaji:

  1. For Pav
  2. 3 cup Refined flour
  3. 1 tbsp Oil
  4. 1 tsp Sugar
  5. 1/2 tsp Salt
  6. 2 tsp Dry Yeast
  7. 1 cup Warm Water
  8. 1 tbsp Butter
  9. 1 tbsp Milk
  10. For Bhaji
  11. 1 cup Spinach(washed and chopped)
  12. 2 Boiled Potatoes
  13. 1 cup Cauliflower (chopped)
  14. 1 Green Capsicum
  15. 2 Tomatoes
  16. 1/2 cup Green Peas
  17. 1/4 cup Coriander leaves
  18. 2 Green Chillies
  19. 2 tbsp Butter
  20. 1 tsp Cumin seeds
  21. 1 tsp Ginger paste
  22. 1 tsp Garlic paste
  23. 1 Onion(finely chopped)
  24. 1 tsp Salt
  25. 1/2 tsp Red Chilli powder
  26. 1 tsp Garam Masala powder
  27. 1/2 Lemon
  28. For Pav bhaji
  29. 2 tbsp Butter
  30. 1/2 tsp Red Chilli powder
  31. 1/2 tsp Garam masala powder
  32. 1/2 tsp Chat masala powder
  33. 1/2 Lemon(cut in wedges)
  34. 1/2 Onion (cut in rings)
  35. 1 tbsp Coriander leaves(chopped)

Instructions to make  Hariyali Pav Bhaji

  1. For pav, take warm water in a bowl, add dry yeast, sugar, salt and oil, cover and rest for 10 minutes.
  2. Add this mixture in flour and knead a soft dough.
  3. Cover and keep the dough for 2 hours, after that make big size balls from it and palce on greased baking tray.
  4. Keep these balls on tray for 30 minutes, then brush with milk.
  5. Bake these buns in OTG for 15 minutes on 200℃, after bake, brush butter on buns.
  6. For bhaji, Take a pan, add 1 cup water and spinach, mix it well and boil for about 5 minutes on medium heat.
  7. Remove it from hot water and transfer this into a bowl filled with cold water, soak for 2 - 3 minutes.
  8. Transfer this into a blender, add coriander, green chilli and blend it into a smooth puree.
  9. Take a skillet, add capsicum, tomato, cauliflower, peas and salt, mix well and cook for 5 - 7 minutes on medium heat.
  10. Heat 1 tbsp butter in a skillet, add cumin, ginger paste, garlic paste and stir for 1 -2 minutes.
  11. Then, add onions and fry till translucent or until it turns golden brown in color.
  12. Now, add the boiled veggies, potatoes, chilli powder and garam masala powder, mix it well.
  13. Cook for 5 minutes on medium heat, then add the blended spinach puree and mix it well.
  14. Mash the mixture with the help of a food masher.
  15. Cook for 3-4 minutes more and add lemon juice and mix it again.
  16. Add 1 tbsp butter again and switch off the flame.
  17. Heat 1 tbsp butter in a pan, add 1 tsp coriander, 1/2 tsp garam masala, 1/3 tsp chilli powder and chat masala, stir well and toast the pav buns on it for 2 - 3 minutes.
  18. Garnish pav bhaji with onion rings, lemon wedges, butter and coriander leaves, serve hot.
