  14. 1 tbsp mix crushed coriander and cumin seeds

  1. Take 4 medium size onions peel and wash them then thinly slice them manually or with a slicer. Then add chopped green chillies and salt to it. Mix it very well by hand then cover it and keep it aside for 20 minutes. In the meantime boil 4 eggs. The eggs should be hard boiled. Once done peel them and cut them in 4 equal pieces. Now for the spices you can add more or less as per your choice. You can even skip or add some spices as per your taste and preference. After 20 minutes the onions will become soft and start releasing water at that time add all the above-mentioned ingredients to it followed by gram flour and mix them well.
  3. Mix them very well by your hands without adding any water. We will not add water to this mixture and will bind all the ingredients with the onion water only. If your mixture is runny add 1-2 tbsp of gram flour and mix again. Then add soda and mix them all well kneading for 3-4 minutes so that the mixture becomes light and the fritters comes out soft and spongy. Now keep this mixture aside for 10 minutes. Meanwhile heat up the oil on medium heat. After 10 minutes grease your hands with oil.
  4. Then take a lemon size portion of the mixture flatten it then put an egg piece on it and cover it from all sides making sure it's covered from all the side else it will break while frying. Like so make 2-3 more fritters and start frying on medium heat. It takes 7-8 minutes for 1 batch to be done completely. Make the fritters and fry them don't keep them else the onions will start releasing it's water and the fritters will break and loose it's shape. Fry then flipping over from both the sides.
  5. Fry them till they are golden brown and serve them hot with green chutney or tamarind chutney or tomato sauce or any dip of your choice. Make them and enjoy with your loved ones.
