Ingredients and spices that need to be Prepare to make Puri and Aloo Masala:

  1. For the Bhaturas or Puris-
  2. 1 cup Wheat Flour or Sharbati Gehun Aata
  3. 1 cup All-purpose Flour or Maida
  4. 1 tsp Salt
  5. 1 tbsp Oil
  6. As needed Water
  7. For the Aloo Masala-
  8. 6-7 Potatoes boiled
  9. 2-3 tbsp Oil
  10. 1 tsp Black Mustard Seeds
  11. 2 Sprigs Curry Leaves
  12. 1 tsp Salt
  13. 1/2 tsp Turmeric powder
  14. 1/2 tsp Dry Mango powder or Amchur
  15. 1/2 tsp Garam Masala
  16. 1 tbsp Bengal Gram or Chana Daal
  17. 2 Onions finely chopped or sliced
  18. 3 tbsp chopped Coriander Leaves

Steps to make Puri and Aloo Masala

  1. Make a soft dough out of all the ingredients listed under dough preparation.
  2. Divide the dough into golf sized balls. Roll them with light hands. Deep fry in hot Oil on both the sides. Keep an eye while frying. Check the oil temperature. If it is too hot, reduce it a bit and if it has become less hot, increase the flame accordingly.
  3. It is advisable to roll all the Bhaturas and keep them covered with a cloth. Deep fry all one by one at the same time. Serve them hot with Aloo masala as I did or Chole masala.
  4. Boil potatoes using a little salt. Peel and dice them into small cubes. Heat Oil in a Kadai and add Asafoetida and Dry Red Chillies. Now add Black Mustard Seeds. After they crackle, add Curry Leaves and shredded Ginger. Also add Bengal Gram or Chana Daal. Keep the heat on a low.
  5. Now add sliced Onions and saute until translucent. Next add the Green Chillies, Salt and the Potato cubes. Cover and simmer for 10-12 minutes on low heat only. Stir in some homemade Dry Mango powder or Amchur.
  6. After 10 minutes, sprinkle Garam Masala (it is optional) and garnish with Coriander Leaves. Serve it piping hot with your favourite dishes. Enjoy!
