  3. Then add soaked and drained rice and cook till rice is soft under medium flame.
  4. Cook under medium flame for 10 - 14 minutes.
  5. Now add sugar + cashews only and simmer for 8-10 minutes.
  6. Lastly add ghee and simmer for 2 minutes more. Switch off flame and then add raisins. Payesh is done and let it come to room temperature.
  7. After cooling.
  8. Serve after 4-5 hours of cooling as it tastes much better.
