Jodhpuri Mirchi Vada is a popular street snack of Rajasthan also known as Jodhpuri Mirchi Vada. Green peppers stuffed with a masala aloo filling and deep fried. Serve with a tangy tomato chutney or white bread. These Mirchi Vadas are typically served as an evening snack or breakfast along with tea. Jodhpuri Mirchi Bada is very similar to Hyderabadi Mirchi Bajji where we stuff the chillies with a different filling.
Ingredients and spices that need to be Prepare to make Jodhpuri Mirchi Vada:
- 🎯 For Masala Filling :--
- 8 no. (250 gram) big long green chilly
- 6 no. Boiled and mashed potatoes
- 2 tbsp oil
- 8-10 no. Chopped Sweet curry leaves
- 1/2 tsp asafoetida
- 1 tsp cumin seeds
- 2 no. Finely chopped green chilly
- 1/2 inch ginger paste
- 1 tbsp coarsely crushed dry coriander seeds
- 1 no. Midium size finely chopped onion
- 1 tsp salt
- 1/2 tsp red chilly powder
- 1/4 tsp turmeric powder
- 1 tsp garam masala
- 1/2 tsp dry mango powder
- 2 tbsp finely chopped green coriander leaves
- 1/2 tsp sugar
- Oil for deep frying as per required
- 🎯 For Besan Batter :--
- 1.5 cup gram flour (besan)
- 1/4 tsp salt
- Pinch turmeric powder
- 1/4 tsp red chilly powder
- 1/2 tsp carrom seeds
- 1/4 tsp backing soda
- Water as per required
Instructions to make Jodhpuri Mirchi Vada
- First of all, wash the potatoes and add in a pressure cooker, add water as required and boil it on medium gas flame for four whistle. Now cool these potatoes and mash them with your hands.


- Now we will make the masala to stuff the chillies. For this, heat oil in a pan, add cumin seeds in it, add asafoetida, sweet curry leaves pieces, chopped green chillies, ginger paste, half-crushed dry whole coriander and mix and saute for a while.



- Now add the chopped onion to this and mix and saute until the color of the onion turns pink. Now add salt, red chilli powder, turmeric powder, garam masala, amchoor powder and mix well.


- Now add boiled potato mash to this and mix well. Then add sugar and green coriander leaves to this and mix well and switch off the flame. Leave this mixture to completely cool.




- Now we will make besan batter for chilli pakoda. For this, add gram flour in a bowl, add salt, turmeric powder, red chilli powder, carrom seeds and baking soda and mix well. Now add water little by little and prepare the pakoda batter a little thick.



- Now wash the big green chillies and clean them with a cloth and dry them, make a cut in the middle with a knife and remove all the seeds from it and prepare it.


- Then stuff the prepared potato masala very tightly in the chopped chillies. And in this way prepare all the chillies.


- Now heat oil in a pan. Now coat the chillies in besan battar and add it to the hot oil and fry it golden on medium flame of gas.





- Now our very crispy and slightly spicy jodhpuri mirchi vada is ready to serve. Enjoy this vada with hot tea or coffee served with masala curd, tomato ketchup and green chutney.
