Ingredients and spices that need to be Take to make Aloo Paratha:

  1. 4 Boiled potatoes medium(peeled and grated)
  2. 1 tsp Cumin seeds
  3. 2 tsp Ginger garlic paste
  4. 2 Chopped green chillies
  5. 1/4 tsp Asafoetida or hing
  6. 2 tbsp Chopped coriander leaves
  7. 1 tsp Turmeric powder
  8. 2 tsp Chilli powder
  9. 1 tsp Cumin powder
  10. 2 tsp Coriander powder
  11. 1.5 tsp Salt or as per taste
  12. 1 tbsp Lemon juice
  13. 1 tsp Sesame seeds
  14. 1/4 tsp Omum seeds
  15. For the dough:
  16. 2 cups Whole wheat flour
  17. 1 tsp Salt
  18. 1 tbsp Cooking oil
  19. as required Water to mix dough

Steps to make Aloo Paratha

  1. First, mix dough with all the given ingredients. Keep covered for 15 minutes.
  2. Heat oil in a pan. Add cumin seeds, hing and saute well. Add ginger and garlic paste, chillies, and mix well.
  3. Then add all the spices, sesame and omum seeds and a spoonful of water and stir well. Then add the grated potatoes and keep stirring. Add salt, lemon juice and mix well. Then remove from heat and stuffing is ready. Cool it till easy to touch.
  4. Now make equal sized balls from the dough and the stuffing. Then roll out the dough ball to a small disc.
  5. Place the stuffing ball, hold and bring the edges together. press and close completely. Remove extra dough on top and then roll the stuffed ball between palms to a smooth ball.
    Tip: Apply a little amount of water on the edges when closing the stuffed dough rounds.
  6. Now sprinkle dry flour on rolling platform. Place the ball and roll the paratha to an 1" disc.
  7. Heat a skillet. Place the rolled paratha. Roast on both sides on medium heat till small brown dots appear.
  8. Then apply oil on both the surfaces and roast another 30 seconds.
  9. Remove from heat and store in hot box. Similarly make all the Parathas.
  10. Serve hot with choice of side dish and enjoy!
