Vada pav, alternatively spelt wada pao, is a vegetarian fast food dish native to the state of Maharashtra. The dish consists of a deep fried potato dumpling placed inside a bread bun sliced almost in half through the middle. It is generally accompanied with one or more chutneys and a green chili pepper.

- 🎯 For Vada Pav Dry Chutney :--
- 10-15 garlic cloves
- 10-12 dry red chillies
- 1/2 cup dry coconut pieces
- 1 tbsp peanuts
- 1/2 tsp salt
- 2 tbsp kashmiri red chilli powder
- 🎯 For Vada :--
- 3 no boiled and mashed potatoes
- 7-8 no sweet curry leaves
- 3 no. Green chilly paste
- 7-8 no garlic cloves paste
- 1 inch ginger paste
- 3 tbsp finely chopped green coriander leaves
- 1 tsp mustard seeds
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- Pinch asafoetida
- Oil as per required
- 1/2 tsp salt
- 2-3 tbsp dry Vada pav chutney
- 1 no. Finely chopped onion
- 5-6 no. pav
- 3 tbsp tomato ketchup
- 🎯 For Vada Batter :--
- 1/2 cup gram flour (besan)
- 1/2 tsp salt
- 1/4 tsp turmeric powder
- 1/4 tsp asafoetida
- Pinch backing soda
Instructions to make Vada Pav Mumbai Style
- First of all, heat a pan and roast dry coconut pieces, dry red chillies, garlic cloves and peanuts one by one.



- Then grind the dry coconut pieces first in a mixer jar. Then transfer this coconut powder to a bowl. Now grind dry red chillies and crush them by adding peanuts, garlic and salt.



- Then add crushed coconut powder and Kashmiri red chilli powder to this crushed chilli powder and grind it in a mixer. Now dry chutney of vada pav is ready.



- Now prepare to make a vada. For this, heat oil in a pan, add mustard seeds, asafoetida, sweet curry leaves, green chili-ginger-garlic paste and fry it. Now add turmeric powder, garam masala, boiled mashed potatoes and green coriander leaves and mix everything. Cool the prepared masala of this vada.



- Now to make vada batter, add gram flour, salt, asafoetida, and turmeric powder in a bowl and add water little by little to make a medium thin batter. Now keep this batter aside. Now make the masala of the potato into the shape of vada or patties.



- Now heat oil in a pan to fry the vada. Then add baking soda to the gram flour batter. Now coat the potato vada in this batter and deep fry it in hot oil until golden brown. Then fry this batter like small bundi by hand. Now break it by hand. Take it out in a bowl. Now add the dry chutney of vada pav and chopped onions and mix it.



- Now to assemble the vada pav, apply tomato sauce on one side of the pav and apply the vada pav dry chutney on it, put the potato vada on it, again apply the vada pav masala and fry it on a hot pan with oil on both sides.


- Now Mumbai Style Vada Pav is ready to eat. Serve this vada pav in tomato sauce with vada pav dry chutney.
