- 11/2 cup rajgira flour
- 2 tbsp finely chopped green corainder leaves
- 1 tsp green chilli ginger paste
- Salt to taste as required
- For spicy potato subzi
- 2 : tbsp ghee
- 4 medium boiled potatoes
- 1 big ripe tomato
- 1 tsp green chilli ginger paste
- 1/2 tsp tumeric powder
- 1 tsp dhania jeera powder
- 1/2 tsp aamchur powder
- Salt to taste as required
- To grind whole spices(dry masala)
- 1/2 tsp fenugreek seeds
- 1/2 tsp cummin seeds
- 1/2 tsp peppercorns
- 1/2 tsp kalonji seeds
- 1 big cardamom
- 2 cloves
- 1/2 " cinnamon stick
- 1 small bay leaf
- 1 tsp dry kasuri methi
- 2 tbsp finely chopped green corainder leaves to garnish
Steps to make Rajgira Puris and Spicy Potato Subzi
- First dry roast all mentioned whole spices. Cool and grind to powder. Keep aside.
- Peel and chopped boiled potatoes into big pieces. Mash 3-4 boiled potatoes pieces.
- Grind tomato in mixer jar to make puree. Keep aside.
- In cooking pan add heat ghee. Add and saute green chilli ginger paste for few seconds. Add tomato puree and cook for 2 minutes. Add freshly ground whole spices powder, tumeric powder, dhania jeera powder mix well and cook for 2 minutes.
- Add boiled potatoes pieces along with mash potatoes. Mix well. Add kasuri methi,salt and mix well. Add 2 cups water. Cook for 1 boil on fast flame. Lower the flame and simmer for 5-6 minutes.
- Garnish with chopped coriander leaves. Serve in lunch box.

- Now to prepare Rajgira Puris.. in mixing bowl add rajgira flour, green chilli ginger paste, chopped green corainder leaves,salt and mix well. Gently add little little water and bind into semi thick dough.
- Heat oil in frying pan. Place slightly wet cloth on rolling board. Take a big lemon size portion from prepared Rajgira dough. Place on one side of wet cloth. Fold the cloth and pat on dough portion with hand to make round puri. Gently pick it up and drop in hot oil. Deep fry 3-4 puris at a time on medium flame till crispy golden.

- Note..we have to prepare Rajgira Puris immediately with prepared dough. Otherwise dough would be soggy and won't be able to pat/ roll puris. Hence bind dough as per requirement.
