- For the dough:
- 400 gm flour
- as per taste Salt

- For stuffing:
- 300 gm peas
- 1 inch ginger
- 3-4 green chillies
- 1/2 tsp Asafoetida
- 1/2 tsp Turmeric
- 1 tsp Cumin seeds
- 1 tsp Cumin powder
- as per taste Salt and sugar
- 1 tsp Garam masala powder
- For dum aloo:
- 400 gm (80% boiled) baby potatoes
- as required Mustard oil
- 1 Bayleaf
- as required Whole garam masala
- 1 Whole red chilli
- 1 tsp Cumin seeds
- 1 tsp Ginger paste
- 2 medium size sliced tomatoes
- as required Turmeric powder
- 1 tbsp Cumin powder
- 1 tbsp Coriander powder
- 1 1/2tsp Garam masala powder
- as required Salt & sugar
- as required Chopped coriander leaves
- 1 tsp Red chilli powder
- 1 tsp Kashmiri red chilli powder
Instructions to make Peas kachori & Dum aloo
- Knead a soft dough with all the ingredients & lukewarm water. Rest for 20-30 mins covering it.
- Make a coarse paste with peas,ginger & green chillies. Heat oil. Saute cumin seeds & asafoetida. Add the paste along with the masalas,salt and sugar. Cook till the raw smell of the peas go away. Spead on a plate & let it cool.
- For the dum aloo heat oil. Saute cumin seeds, whole red chilli,whole garam masala, bayleaf & ginger paste. Then add the tomatoes. Cook till it softens. Add the masalas & little water. Cook till oil seperates. Add the potatoes and required Salt & sugar. Stir & pour water to make gravy. Cook on low to medium flame for another 15 mins. Lastly add fresh chopped coriander leaves.
- For the kachori now make small balls out of the dough. Press & give a bowl like shape to each. Put the stuffing & again roll it into small puri.
- Deep fry the kachori in batches. Serve hot with dum aloo.
