- 1/2 cup Curry Leaves
- 2 Dry Red Chillies
- 2 tbsp Oil
- 1 tbsp Sesame Seeds
- 1 tbsp Coriander Seeds
- 1 tbsp Bengal Gram or Chana Daal
- 1 tsp Cumin Seeds
- 2-3 chopped Garlic
- 1 tsp Salt
- 1 tbsp Dry Tamarind
Instructions to make Curry Leaves Rice
- Heat Oil and add Cumin Seeds at first. After a minute, add chopped Garlic and the rest of the ingredients.
- Saute all these for one more minute until Garlic is done. The Bengal Gram should also be roasted well. Now add Curry Leaves to it. Saute them until crisp on a low heat.
- Switch off after 4 to 5 minutes of sauteeing. Let it cool down before grinding into a powder. Store this tasty Podi in the refrigerator for about a month. Add a tablespoon of Ghee to a deep pan. Add cooked Rice to it. Followed by the Curry Leaves Podi or Chutney. Mix well and that's it.
