I am making this recipe for my mom. I remember back in 2010 when I was returning from office - I was hungry and felt like picking up some Vada Pavs for every one at home. I asked the guy to pack Vada Pavs for 3 people excluding my mom as she had this habit of refusing eating anything that has come from outside and also Indian mothers deprive themselves when it comes to feeding her babies. I watched and followed this since childhood and subconsciously learnt that even if I purchase an extra Vada Pav for my mom she would refuse to eat it. At last when I reached home and offered Vada pav to everyone my mom was disappointed that I didn't get one for her. She was vocal about being left out. I felt ashamed and realised that it was wrong of me to think that moms don't feel bad about being left out, they choose to deprive themselves to prioritise their kids first. So today I have decided to make this recipe especially for my mom. I hope this will make her smile

Ingredients and spices that need to be Take to make Vada Pav:

  1. For potato masala
  2. 7-8 boiled and peeled potatoes
  3. 2 tbsp garlic green chilli paste
  4. 1 tsp turmeric powder
  5. 1/2 tsp mustard seeds
  6. 5-6 curry leaves
  7. 1 tbsp oil
  8. As per taste salt
  9. 2 tbsp chopped coriander leaves
  10. For Vada cover
  11. 1 cup gram flour
  12. 1 tbsp rice flour
  13. 1 tsp carom seeds
  14. 1/2 tsp turmeric powder
  15. 1/2 tsp salt
  16. 1/2 tsp red chilli powder
  17. As needed water for making gram flour slurry
  18. As needed oil for deep frying
  19. For assembling Vada paav
  20. As needed garlic chutney
  21. As needed green chutney
  22. As needed sweet tamarind chutney

Instructions to make Vada Pav

  1. For making potato masala
  2. Firstly, In a heavy bottom kadhai heat oil and add - mustard seeds. Let it crackle then add curry leaves and garlic green chilli paste. Saute till the raw aroma of garlic disappeares. Now add boiled and peeled potatoes by roughly crushing them with hands. Add turmeric powder and salt and mix well. Finally add chopped coriander leaves and turn off the flame.
  3. Now let the potato masala cool down and take a ball sized portion from it, roll it and flatten it a bit with the help of your palms and keep aside for later use.
  4. For Vada cover
  5. In a bowl mix together - gram flour, rice flour, salt, carom seeds, salt, turmeric powder and red chilli powder. Give it a mix and add water to make thick but flowing gram flour slurry. Add water in batches to avoid formation of lumps. Also add 1 tsp hot oil before making the Vadas in the slurry, mix well.
  6. Now heat oil in a kadhai. Dip the potato balls in the gram flour slurry, coat it nicely and deep fry the Vadas
  7. Fry the Vadas evenly from both sides till it's nice and crisp from outside on medium to high flame.
  8. Similarly fry all the Vadas in batches.
  9. While assembling the Vada paav, slit the paav and apply red garlic chutney, green chutney and sweet tamarind chutney. Place the hot vadas inside and close. The Vada paav is best served hot along with some fired green chillies.
