  1. First boil milk, add milk powder, sugar, cornflour mix well and cook for 5-6 min till little thicken. Cool down completely.
  2. Now whipped cream until soft peak. Fold whipped cream into cooled milk mixture mix well.
  3. Divide mixture into three equal portion in the bowl.
  4. 1st bowl (For strawberry flavour) layer: add strawberry crush + pink food colour + tootifruti mix well and cling wrap the bowl and freezer.
  5. 2nd bowl (pista flavour) layer : add 2-3 tbsp pistachio powder + pista essence + green food colour mix well. Cover with cling wrap and freezer.
  6. 3rd bowl (mango flavour) layer: 1/2 cup mango puree + yellow- orange food colour (essense optional) cover with cling wrap and freezer.
  7. 4th layer: You can use bread/ rusk/ britania fruit cake for layering. I using leftover homemade vanilla cake sponge, Take a bowl crumb this vanilla sponge add hot sugar milk mixture make dough like consistency.
  8. Layering:- Now take loaf pan wrapped with cling Than layer (vanilla cake sponge) cassata base chill for 10-15 minutes.
  9. Now take out mango flavour from the freezer blend it and pour 2nd layer into the cassata base set for 2 hours.
  10. Again blend pistachio flavour and pour into the mango layer and set for 1 hour.
  11. Later add the final layer strawberry layer, blend and pour on top.
  12. Sprinkle, tootifruti, cashews, soaked almonds chopped, pista.
  13. Allow to chill in freezer until it becomes firm.
  14. Slice when it's immediately out from the freezer perfect cassata Ice Cream is ready. Serve chilled!

  16. (Eggless Vanilla cake sponge Recipe):- Take a bowl add 1 cup flour + 2 tbsp milk powder + 1 tsp baking powder + 1/2 tsp baking soda, 1/4 tsp salt mix well keep aside.
  17. Another bowl add 1/3 cup curd + 1/4 cup oil + 1/2 cup sugar + 2 tsp vanilla + 4+5 tbsp milk mix well / beat. (If you using egg add 2 egg skip curd).

  19. Add tootifruti coat with flour mix into the batter pour batter into round greased dish bake 180 C for 35 to 40 minutes.
