  11. Roast on low flame until the peanuts turn crunchy.
  12. Cool completely, and transfer to the mixer jar.
  13. Pulse and powder to a coarse peanut powder.
  14. Add the peanut powder to the soaked sabudana.
  15. Adding peanut powder will help to absorb any excess moisture if present.
  16. Also, add 1 tsp sugar and ¾ tsp salt.
  17. Mix well combining everything well. keep aside.
  18. Now in a large kadai heat 2 tbsp ghee.
  19. Splutter 1 tsp cumin and few curry leaves.
  20. Add 1 inch ginger, 2 chilli and 1 potato.
  21. Fry until the potato turn slightly golden brown.
  22. Further, add sabudana peanut mixture and mix gently.
  23. Make sure to mix by scarping the pan.
  24. This helps to prevent any sabudana from sticking.
  25. Also, be very gentle else there are chances for sabudana to be mashed out.
  26. Cook until the sago pearls turn translucent.
  27. Now add ½ lemon and 2 tbsp coriander. mix well.
  28. Finally, enjoy sabudana khichdi
