  4. 1/2 cup boiled macaroni

  9. For Tomato Sauce
  10. 1 medium onion cut into chunks
  11. 2 medium tomatoes cut into chunks
  12. 1 large garlic clove
  13. 2-3 green chillies
  14. 1 tsp coriander powder
  15. 1 tsp roasted cumin powder
  16. 2.5 Tbsp tomato puree
  17. 1.5 Tbsp malt vinegar
  18. 1 tsp brown sugar
  19. 2 Tbsp olive oil
  20. 1 Tbsp chopped coriander leaves

Instructions to make Kushari

  1. For Tomato Sauce - blend together the onions, tomatoes, garlic, green chilies, coriander powder, roasted cumin powder, tomato purée, malt vinegar and brown sugar to a purée.
  2. Heat the olive oil in a pan and add the tomato sauce purée. On low flame cook until it has a Salsa consistency.
  3. Add the coriander leaves, salt and pepper. Set aside 1 Tbsp for garnish and set aside the rest
  4. Add the cooked rice to the pan, boiled macaroni, boiled whole black Masoor Dal, boiled chickpeas with a dash of olive oil. Mix well
  5. Garnish with rest of the reserved sauce, fried onions and mint leaves
