Ingredients and spices that need to be Prepare to make Aloo Tikki Chaat or Ragda Patties:

  1. For aloo tikki....
  2. 3-4 boiled potatoes
  3. 1 tsp salt
  4. 1 tsp roasted Cummin powder
  5. 1 tsp chaat masala
  6. 1/2 tsp green chilli paste
  7. 3 tsp cornflour
  8. 3-4 tbsp oil for toasting
  9. For chola matar..
  10. 1 cup white pea, soaked
  11. 1/8 tsp baking soda
  12. 1 tbsp ginger-garlic paste
  13. 1 tsp chilli paste /powder or to taste
  14. 1 tsp kasmiri mirch powder
  15. 2 tsp coriander powder
  16. 1 tsp turmeric powder
  17. 1 tsp garam masala
  18. 1 tsp Salt or to taste
  19. For chaat making and garnishing...
  20. 1/2 cup finely chopped onion
  21. 1 cup sweet curd
  22. 1/2 cup tamarind chutney
  23. 1/2 cup spicy green chutney
  24. 1/2 cup sev
  25. 15-20 papdi
  26. 1/2 cup chopped coriander leaves

Instructions to make Aloo Tikki Chaat or Ragda Patties

  1. Firstly, in a pressure cooker add soaked white pea,salt and turmeric powder,baking soda and 3 cup water. Cooked it for 5 whistle or until peas turns soft.
  2. In a deep kadhai heat the oil, add in asafoetida, ginger-garlic and chilli paste cook for few seconds or till raw smells goes.
    Further, add boiled pea,red chilli powder, coriander powder, turmeric, garam masala and salt to taste, mix it well.
    Stir and cook for 8-10 minutes on low-medium flame.
  3. For aloo tikki..Mash boiled potatoes add in salt, chat masala, roasted Cummin powder, chilli paste and corn flour mix everything well. Make medium size balls and shape it like tikki.
  4. Further,heat a tawa or pan and shallow fry Tikkis on medium heat till golden brown in both sides.
  5. Before assembling chaat on plate, Keep everything in front.
    In a serving plate, place some hot chola matar, then place hot tikki over it and topped with khatti mithi chutney, spicy green chutney, sweet curd, chopped onion, some chat masala on it and sprinkle some sev and coriander leaves.
    Serve immediately. Enjoy
