CORN 🌽 BHAAJI
A healthy platter of mix veggies stir fried in butter 🧈 along with basic seasoning of salt 🧂 n pepper.

- 1 big + 1 medium potato
- 1 big onion
- 1 medium capsicum
- 2-3 green chilli
- as per taste Salt and pepper powder
- 1/2 cup water,
- 1 tbsp lemon juice
- 1 tsp garam masala
- 1/2 cup boiled green peas
- 1 cup frozen sweet corn
- 1 inch ginger,
- 5-6 garlic
- 2-3 tbsp butter
Steps to make Corn 🌽 Bhaji
- Cut potato in edges and marinade in salt for 10 - 15 minutes. Roughly Slice onion and finely mince garlic and keep aside.

- Slit green chilli, finely slice capsicum (medium slice), finely mince garlic and keep aside.
Put the frozen sweet corn in water for 10 -15 minutes and then drain excess water and keep aside.
- In pan add butter, stir fry potato edges by squeezing excess water and fry well, take out and keep aside.
- Now in same pan add little more butter add garlic and sauté for 1-2 minutes, then add ginger, then onion, then green chilli and stir fry for 2-3 minutes under medium flame till onion turns translucent.
- Now add capsicum slices + little salt and stir fry for 2-3 minutes and then add 1/4 - 1/2 cup warm water, also add potato slices / wedges and cook under cover for 3-4 minutes.

- Make sure that capsicum is cooked well, now add boiled green peas, sweet corn, pepper powder, salt as required and sauté nicely.
- Lastly add garam masala, squeeze 1 tbsp lemon juice, mix well and sauté for 1-2 minutes and corn Bhaji is ready to serve.

- Serve Corn Bhaaji with roti / paratha along with salad like onion tomato.
