Ingredients and spices that need to be Take to make Vadapav:
- 500 gram boiled potatoes
- 4 green chillies
- 5 cloves garlic
- 1 inch ginger
- 2 tbsp coriander leaves
- 3 tbsp oil
- 1/4 tsp mustard seeds
- 1/2 tsp hing /asafoetida
- 1 tsp udad daal
- 8-10 curry leaves
- 1/2 tsp turmeric
- Salt to taste
- Batter -
- 1.25 cup gram flour/ besan
- 1/4 tsp turmeric
- Salt to taste
- 1/4 tsp carom seeds
- 1/4 tsp red chilli powder
- 1 tbsp hot oil
- Other ingredients -
- 10 bread rolls /pav
- 100 gram butter
- 1/2 cup coriander chutney
- 1/2 cup date tamarind chutney
- 1/2 cup dry garlic chutney
- 10-15 fried green chillies
Instructions to make Vadapav
- Grind together green chillies, garlic, ginger and coriander leaves without adding any water. Grate boiled potatoes.
- Heat oil in a pan and add mustard seeds. When it crackles, add hing and udad daal to it and roast it until light pink in colour. Now add curry leaves, turmeric and salt to it along with the green spice paste. Cook it for half a minute and add potatoes to it. Mix everything well. Divide it into 10 equal portions and make balls out of it.
- Add turmeric, salt, carom seeds and red chilli powder to besan and mix everything well. Add enough water to make thick batter. Heat oil to fry vada. Add 1 tbsp hot oil to the batter and give it a good mix.
- Cover potato balls with the batter completely and fry in hot oil for 2 - 3 minutes. Add 3 - 4 vada at a time. Fry all the vada in the same way.
- Cut bread rolls from the middle and roast it in the butter. Now add all the chutneys on one piece and put one bataka vada on top and cover it with the other part.
- Serve vada pav with fried green chillies and all the chutneys.
