- 1 cup Washed, soaked urad daal
- 1 tablespoon Chilli ginger paste
- Salt to taste
- Water to mix
- Oil to fry
- For assembly
- 20 Readymade papadi puris
- 2 cup Thick fresh yoghurt
- 2 cup Thin buttermilk to soak bhalla
- 1 cup Sweet tamarind and dates chutney
- 1/2 cup Spicy mint and coriander chutney
- Spices as per taste
- Chilli powder, cumin and coriander powder,
- Chaat masala, salt
- Shredded carrots and beet 1 cup each
- 2 boiled and mashed potatoes
- 1 cup Boiled peas
- 1 Finely chopped onion
- 1 Finely chopped tomato
- 1/2 cup Pomegranate pearls
- Thin Sev, chopped coriander leaves to garnish
Steps to make Bhalla Papdi Chaat
- First, drain the soaked (for 4 hours) urad daal. Grind to a fine and creamy paste with very less water.

- Then add salt and ginger chilli paste. Mix well. Heat sufficient oil. Make small rounds of the daal and fry vadas till golden brown.
- Dip them in thin buttermilk for 1/2 an hour. Then squeeze out moisture and arrange on a plate.

- To assemble the bhalla papadi chaat:
Take a plate. Arrange soaked vadas on it. Then arrange the papadi. Then mix prepared potato with peas, salt, chilli powder and chaat masala.
Then add chopped onion and tomato.
Place spoonfuls of stuffing on the Papdi.
Then pour curd all over. - Then pour chutneys, shredded veggies and pomegranate pearls.
