Sabudana parathas are crispy outside and soft inside. It can be savoured as such or with curd and raita. I take small sabudana, that's available here.

  1. 1 cup sabudana/sago
  2. 1 cup water
  3. 3 boiled and mashed potatoes
  4. 1/2 cup roasted ground nuts
  5. Handful chopped green coriander leaves
  6. 1 green chilli chopped finely
  7. 2 Tsp grated ginger
  8. 3 Tbsp sabudana powder
  9. 1 Tsp rock salt
  10. As Required Ghee/oil to roast

  1. Soak sago in water for 4-6 hours. Make the ground nuts rough/dardara in grinder.
  2. Mix all the ingredients mentioned. Make a tight dough. Don't use water as boiled potato has water. Powdered sago helps in binding. Make balls out of dough.
  3. Don't roll the parathas by roll pin. Place on plastic sheet/oiled butter and press by palm lightly.
  4. Heat ghee or oil in the nonstick pan. place the sago parathas. Roast both sides with sufficient ghee/oil. Each paratha takes about 3 minutes to be roasted on medium to low flame.
  5. Roast all the parathas and serve hot with curd and fruits.
