Ingredients and spices that need to be Get to make Punjabi Aloo Malai:

  1. 3 tbsp Olive Oil
  2. 6 tbsp Butter (Used Salted)
  3. 1/2 tbsp Jeera (cumin seeds)
  4. 1 tsp Hing (Asafoetida)
  5. as per taste Salt
  6. 3 tbsp Kashmiri Red Chilli Powder
  7. 1 tsp Jeera Powder (Cumin powder)
  8. 1 tsp Coriander powder (Dhaniya powder)
  9. 1 tbsp Garam masala
  10. 1/2 tbsp Kasuri methi
  11. 1 Tej Patta (Bay leaf)
  12. 1 Cinnamon stick (Dalchini)
  13. 1 Black Cardamom (Badi Elaichi)
  14. Handful Coriander leaves
  15. 1big bowl Onion (Finely chopped)
  16. 1small bowl Tomato (finely chopped)
  17. 1/4 cup Tomato puree
  18. 2 tbsp Paneer (grated)
  19. 100 grams cubes of Paneer
  20. 1 cup Potato (boiled and chopped in medium sized cubes)
  21. 1/2 cup Milk
  22. 2 tbsp Fresh cream
  23. 2 tbsp Ginger Garlic Paste
  24. 1 tbsp Cashew paste

Steps to make Punjabi Aloo Malai

  1. Take a pan, heat it really nicely. Then add 2 tbsp Butter in it. Let it melt properly.
  2. Now in the melted butter, add cubes of Paneer (cottage cheese) and Aloo (Potato) and fry it till nice and golden brown. If you want you can add Salt and Red chilli powder to it. (I have added)
  3. In the same pan, add 3 tbsp Oil and heat it. Then add Finely chopped Onions and Ginger garlic paste. Saute it until the onions become translucent and the raw smell of Ginger garlic is gone.
  4. Now add Finely chopped Tomatoes and Cashew paste.
    Cook until the Tomatoes are mushy. Then add the puree and mix it well.
  5. Let the mixture cool down a bit and add salt. Then blend this mixture into smooth puree. Strain it if you want.
  6. After blending, heat 3 tbsp Butter and let it melt completely. Once the butter is nice and hot, add Jeera (cumin seeds) and let it sputter. Then add in it Tej Patta (Bay leaf), Dalchini (Cinnamon) and Black Cardamom (Badi Elaichi) and saute it well so that the flavour of spices go well in the butter.
  7. Then add in some Hing (Asafoetida) and mix.
  8. Add in the puree we prepared earlier.
  9. Now add all the spices and salt as per your taste. Then add crispy paneer and potatoes to it.
  10. Now add Kasuri methi gently crushing by hands to get a fine powder.
  11. Then add Milk to adjust the consistency and finally add Fresh cream. Mix it gently before serving
  12. Finally garnish it with some freshly chopped Coriander leaves and Enjoy!
