- Add tomato puree,salt and cook for a minute.Lower the flame and add the powdered spices and tomato ketchup and cook on high flame
- Add cooked rajma beans, veggies, black pepper,and cook for a minute.Add a splash of water if the mixture turns too dry and cook for 2-3 min on high flame
- Add boiled rice and mix well gently.
- Add coriander leaves and mix well
- Mexican rice is ready,serve hot by topping it up with some processed cheese crushed nacho chips and some salsa on side

- 2 medium sized diced onions
- 3 medium sized diced tomatoes
- 2-3 chopped jalapeno
- 2 tbsp ketchup
- Handful of coriander leaves
- Lemon juice
- Salt to taste
