  14. 2 tsp chilli flakes

  17. 1 tsp corriender powder
  18. Half chopped onion
  19. 8-10 crushed garlic
  20. Mozzarella cheese
  21. Butter
  22. Salt as per your taste

Instructions to make Cheesy Mexican Rice

  1. Firstly boil the rice till its 90 percent done. You can even make this with leftover rice. Until the rice is getting cooked, take a pan, add 2 tbsp of butter. Now add crushed garlic in it. Saute it for about a min. Then add chopped onion to it. Fry it for 2 to 3 mins. Then add broccoli and babycorn to it. Saute them for another 1 min.
  2. Now in a small bowl, add 2 tbsp tomato ketchup and 1 tsp vinegar. Mix it well and add it into the pan. Then add pepper powder, chilli flakes, oregano herbs and corriender powder in it. Mix it well with other ingredients. Cook them well for another 2 mins.
  3. Then add boiled peas, rajma and corn to it. Give everything a good mix. Cook them well with the masalas for about a min. Then add rice and other veggies like capsicum, bell peppers, onion cubes and chopped black olives in it. Add some salt as per your taste.
  4. Gently mix everything well. At this point of time, you can add some more ketchup if you wish. Flip the rice gently or else it would get break. Cover it and cook it for about 2 to 3 mins on a low flame.
  5. Your Mexican rice is now ready to serve. Serve it hot by garnishing it with some mozzarella cheese. Enjoy the rice with some salsa dip.
