There are many many Punjabi recipes , chatpati karari to fried and Desi , so I thought I shared with you guys one of our families favorite Punjabi recipe called "Mutanjan", there are many types of Mutanjan and coloured zarda but this recipe is my version & style of making Mutanjan , so hope you like it!

Ingredients and spices that need to be Get to make Punjabi Mutanjan:

  1. 1 kg boiled Rice
  2. 750 grams Sugar
  3. 1 cup Blanched Almonds
  4. 1 cup muraba Ashrafi (red & green)
  5. 1 cup dried coconut flakes
  6. 250 grams Small chamcham
  7. 1 cup khoya
  8. 1 cup chopped gulab jamun
  9. 1/2 cup ghee
  10. 4-5 green cardamoms
  11. 3-4 black cloves
  12. 1 cinnamon stick
  13. 1 cup full fat milk
  14. 1/4 cup Milk Balai
  15. Food colours (yellow, red, orange, green, pink)

Steps to make Punjabi Mutanjan

  1. Heat up ghee then in pot then add Green cardamoms, Black cloves, cinnamon stick and heat it for 30 seconds then add Sugar and milk with Balai and cook until sugar dissolved and thicken.
  2. Separate 1½ cup boiled Rice and add remaining into the sugar syrup. Add colours with little water into rice (2 tbls boiled Rice mixed with each colours) add coloured rice on top of the white rice.
  3. Then add peeled Blanched Almonds, coconut flakes, Muraba Ashrafi then set small chamcham, gulab jamun & khoya cover it and give dumm 10 to 15 minutes. Tasty Punjabi Mutanjan is ready to serve.
