  2. 2 tbsp Instant Active Yeast
  3. 3 tbsps Sugar
  4. 1/2 Cup Lukewarm Milk
  5. For the Dough:
  6. 2 Cups All-purpose flour/Maida
  7. 1/2 tsp Salt
  8. 1/2 tsp Bread Improver: Optional
  9. 1/4 Cup Salted Butter: RT
  10. 1/4-1/2 Cup Fresh Milk: Boiled and RT- Optional (If Required)
  11. 1 Egg White: Big Sized, preferably
  12. 1 Egg Yolk: Separated from its white- Required for the Egg Wash
  13. 1 tsp Milk: To be mixed with the Egg Yolk for the Egg Wash
  14. 2 tbsps For the Toppings: White Sesame Seeds
  15. 1/8 Cup Butter: Melted + 1 tbsp Milk- For the Coating- Post Bake
  16. 1 Handful Black Sesame Seeds: Optional (I haven’t used)

Steps to make Brioche Burger Buns: Without Oven

  1. To begin with: Let’s proof the yeast at the outset- For that, in a bowl/mug, add in all the ingredients aforesaid-
    Mix everything well together-
    Cover it & wait for about 10-12 mins time for the yeast to get activated-
    Once that’s done, let’s move on to its next steps ahead
  2. In a large mixing bowl: Add in the aforementioned dry ingredients one by one post sifting it, at least twice-
    Then, break in the egg to it, once you’ve separated it from its yolk- Reserve the yolk carefully for its later use in the very recipe- Mix everything well together until nicely combined and well blended-
    Add in the activated yeast mixture in it & start kneading it, quite patiently
  3. Now, using your clean hands, knead the mixture for about 15-20 mins time if done manually or else, if you’re using the stand mixer- Using the hook attachment, knead it on the low speed for about 5 mins time until everything’s well combined & incorporated- Then increasing its speed, knead it again for the next 15 mins time until the dough passes the window pane test successfully (VVI)
  4. Once that’s done & the dough has become absolutely smooth & supple & not sticking anymore, anywhere-
    Time to set it at rest for at least an hour’s time for its 1st proofing, by greasing the bowl with some melted butter & evenly applying the same all over the dough to ensure that it doesn’t dry out in the process- Cover it with a cling film wrap & proofing starts
  5. Post the given time period: Uncover the dough bowl- As by now, it should raise about the triple & quadruple of its initial size & that’s what we’re actually looking for it-
    Deflate or degas the same & knead it nicely with your clean hands
  6. In the interim: Beat the egg yolk kept in reserve with some mik as mentioned above & keep it ready & handy
    Also, start preheating your oven (if using it) @160C for about 5-6 mins time & lower the flame to the lowest & keep it on the low-medium flame until we put in our Buns for baking
  7. Now post deflating the proven dough- It’s absolutely imperative to knead it & bring it back to its original initial shape by placing it on the work station- Divide it into 8 equal parts-
    Put all the other pieces inside the cover so as to retain its moisture while working on the one at a time-
    Shape it all into perfect Roundels & leave it on the work station for for its short 2nd proofing for about 15 mins time
  8. Once all the buns are already shaped up & proven briefly for its 2nd & final time now-
    Give them all a good egg wash-
    The reserved separated egg yolk is required now- Mix the same well with one 1 tsp of milk & with a brush apply it onto the Buns all over it-
    Sprinkle some sesame seeds on the top- Now time to bake it straight
  9. If you’re using your oven put it on the preheated one at about 160C for 20-30 mins time (varies due to different temperature settings) or else, if you’re using it without the oven then place it in the preheated vessel & cover it nicely for about 20-30 mins time at the low-medium flame or until nicely dark golden browned all along
  10. Once done- Turn off the heat & let it sit on the hot oven itself for another 10 mins time-
    Take it out to place it on the cooling rack- Apply some soft butter on its tops to prevent it from getting dry & cover it back with a clean damp kitchen towel/cloth & let it cool down completely before having afresh- By now, you’d find your entire house is filled in with the fragrance of these freshly baked buns…ENJOY
