  20. 1 1/2 cup besan/chickpea flour
  21. 1 pinch turmeric powder
  22. 1/2 tsp carom seeds
  23. 1/2 tsp nigella seeds
  24. 2 tsp hot oil
  25. 1/4 pinch baking soda
  26. as per taste Salt
  27. as required Water to make the batter
  28. as required Oil to deep fry Aloo Chop

Instructions to make Aloo Chop And Ghugni

  1. To make Ghugni - Aloo Chop, first pressure cook potatoes (chopped) and soaked white peas by adding turmeric powder.
  2. Heat oil in a heavy pan. Add ponch phutan and splutter them. Then add chopped onion and fry till golden brown. Add ginger-garlic -red chilli paste.
  3. Cook the masala on low heat and wait till the oil separates from the masala. Add tomatoes, salt and cook till soft and mushy
  4. Then add all the dry ingredients of Ghugni preparation. Cook on low heat for 3-4 minutes.
  5. Now, add the boiled white peas, adjust water and boil for 2 minutes. The Ghugni is ready.
  6. Take the ingredients of besan batter and make a medium consistency batter.
  7. Make Aloo Chop round balls with the masala mentioned in the ingredients section.
  8. Heat oil in a pan. Dip Aloo Chop masala in besan batter and deep fry on low-medium heat. Aloo Chops are ready.
  9. Assemble the Ghugni and Aloo Chop. Granish with onion, tomatoes and coriander leaves. Aloo Chop and Ghugni is ready to be served.
