  2. 2 medium size potatoes boiled, peeled and coarsely mashed
  3. Sprig coriander leaves
  4. 1/2 tsp cumin seeds
  5. Salt
  6. 1/2 tsp red chilli powder
  7. 1 tsp ginger paste
  8. 1/2 tsp garam masala powder
  9. 1 tsp Chaat Masala powder
  10. 1/2 tsp cumin powder
  11. 1/2 tsp coriander powder
  12. Oil
  13. For Samose dough
  14. 2 cups Maida
  15. 1 tsp Carrom seeds
  16. 1/4 cup ghee
  17. Salt
  18. Water to knead

Steps to make Samose aur Chai

  1. For Samose Dough - in a bowl add Maida, salt, carrom seeds and mix well, add 1/4 cup melted ghee. Mix well and bind well and use 1/2 cup water slowly to knead. The dough should be tight and not soft. Use cold water to knead the dough
  2. Rest and cover the dough for 30 mins
  3. For Samose filling - in a bowl add the coarsely crushed potatoes
  4. In a pan add oil, add cumin seeds, ginger paste, add potatoes and mix well, add red chilli powder, add garam masala powder, add Chaat Masala powder and mix well, on medium flame and cook for 2-3 mins
  5. Add salt and mix well. Add chopped coriander leaves and mix well, set aside
  6. Knead the dough once and make balls from the dough, roll out like a Roti after greasing the rolling pin and the surface.
  7. Divide the Roti half and cut into half again, make a cone shape and add 1 Tbsp stuffing and roll the cone from one corner to another, add water to the edges to close the cones. Samose is ready to be fried
  8. In a heavy bottomed pan heat oil and on medium flame gently add the Samose, fry on all sides equally and once golden in colour, set aside
  9. Complete the batches
  10. Plate with Tea or Chai and enjoy a evening party time snack of Samose & Chai
