  1. For Dhokla
  2. 2 cups rawa
  3. 1/4 tsp citric acid
  4. 1/2 tsp baking soda/fruit salt
  5. as needed Salt
  6. Water 1 cup+¼ cup
  7. For potato filling
  8. 3 medium size boiled potatoes mashed
  9. 1 tsp oil
  10. 1 tsp mustard seeds
  11. 1 tsp cumin seeds
  12. 1 tsp asafoetida
  13. 1 tbsp ginger chilli paste
  14. 1 tsp turmeric powder
  15. 1 tsp coriander powder
  16. 1 tsp garam masala
  17. Salt as per taste
  18. 1 tsp sugar
  19. 1 tbsp lemon juice
  20. For tadka
  21. 1 tbsp oil
  22. 1 tsp mustard seeds
  23. 1 pinch asafoetida
  24. leaves Few curry
  25. 5 Green chillies cut in to slit
  26. 1 tbsp pav bhaji masala

Instructions to make Masala Dhokla

  1. In a mixing bowl, add rava, water, salt, and citric acid. Mix well and rest the batter for 30 minutes.
  2. For the masala, in a pan add oil, cumin seeds, mustard seeds, and hing. Sauté it.
    Then add ginger-chili paste. Now lower the flame, and add turmeric powder, and coriander powder.
    Then add boiled and mashed potatoes and salt. Mix well with the masala.
    Add garam masala, lemon juice, sugar, and some coriander leaves. Mix well.
    Potato masala is ready. Cooldown completely.
  3. Make 2 equal size roll from potato masala.
  4. Now add some water and place a stand into the steamer.
  5. After 30 minutes, the dhokla batter is soaked properly. Add some water if the batter is thick. Then add baking soda into the batter and mix well.
  6. Add 1-2 ladle batter into grease steel glass. Place potatoes roll into center and cover the roll with batter. Ready another glass in same way.
  7. Place dhokla glass into a pre-heated steamer. Cover and steam dhokla for 12-15 minutes on medium-high flame.
    When dhokla is steam properly, take it out and cool down completely.
  8. Demould dhokla from glass and keep it aside.
  9. For tadka, heat oil in a pan, add mustard seeds, hing, curry leaves,pav bhaji masala, and some coriander leaves. mix well.
  10. Add dhokla roll into tadka and roll in it.
  11. Now cut dhokla into a ring and serve with tomato sauce and green chutney.
