Ingredients and spices that need to be Prepare to make Egg Malai Curry:

  1. 4 eggs, boiled for 10 minutes,
  2. 3 tbsp oil
  3. 2 tbsp butter,
  4. 1 med sized onion sliced,
  5. 8 green chilli,
  6. 1 tejpatta,
  7. 1 pc dalchini,
  8. 1 tsp garlic paste,
  9. 1/2 tsp ginger paste,
  10. to taste, Salt
  11. Pinch haldi,
  12. 1 tsp dhania powder,
  13. 1/2 tsp garam masala powder,
  14. 2 tbsp dahi,
  15. 1 tbsp fresh cream,
  16. 1 tbsp coconut milk,
  17. 2 tbsp kaju badam paste,
  18. Pinch dry roasted kasoori methi crushed,

Instructions to make Egg Malai Curry

  1. Firstly add onion & green chilli in a mixer jar, add lil water, grind it to a fine paste, keep aside.
  2. For Kaju Badam paste..... a). Soak badam overnight, peel them. Soak kaju in boiled water for 1/2 hour. Add in a mixer jar, add lil water, grind it to a fine paste, keep aside.
  3. Take a wok or deep bottom pan, add 1 tbsp oil, heat it. Add peeled eggs, stir fry them till light brown. Keep aside.
  4. Add rest of the oil & butter in the same pan, heat it. Add tejpatta & dalchini, saute it for a sec.
  5. Now add onion paste, stir fry it for a minute. In goes ginger garlic paste, add very lil water, saute it until rawness is released.
  6. Lower the flame, cover it with the lid,cook it till oil separates. Open the lid, add salt & haldi powder, mix it well.
  7. Now add dhania powder & garam masala powder, stir it for a minute.
  8. Whisk dahi, add in the masala, stir it for a minute.
  9. Add kaju badam paste now, stir it, add lil water, mix it well. Cover it again, cook it on low flame until oil has oozed out.
  10. Open the lid, add kasoori methi, fresh cream & coconut milk, mix it well. Cover it again, cook it on low flame until oil has oozed out.
  11. Cut fried eggs into halves, add them upside down one by one in the masala, increase the flame, stir it gently
  12. Add 1 cup water, mix it well. Give a boil.
  13. Cover it again, lower the flame, cook it until gravy becomes saucy.
  14. Turn off the flame, open the lid after 5 minutes.
  15. Take out in a serving bowl, garnish it with chopped dhania patta.
