Ingredients and spices that need to be Make ready to make Lunch Thali:
- For Rice :
- 1 cup basmati Rice
- 2 cup water
- as required Lemon juice(optional)
- Mix veg daal
- 1/2 cup tuvar daal
- 1 cup chopped veggie(onion, tomato, green chilli,cauliflower)
- to tastea Salt
- 1 tsp Turmeric powder
- 1 tsp Cumin seed
- 1 cardamom
- as required Oil
- Aloo Bhujia
- 4 potato cut in thin slices
- to taste Salt
- 1 tsp red chilli powder
- 1/2 tsp turmeric powder
- as required Oil for deep fry
- Aloo-Govi Masala
- 1 chopped onion
- 1 tsp ginger garlic paste
- 2-4 boiled potatoes
- 1 cup half boiled cauliflower
- 1 chopped tomato
- 1 tsp red chilli powder
- as per taste Salt
- 1 tsp turmeric powder
- 2 tbsp masala(coriander, cumin, black pepper powder)
- 1 tbsp garam masala
- as required Coriander leaves for garnish
- 1 tbsp Oil
- Methi Matar Malai
- 2 cups finely chopped methi (fenugreek leaves)
- 1 cup frozen matar(green pea)
- 1 teaspoon lime juice
- 1/2 teaspoon garam masala powder
- 1 teaspoon sugar
- 1/2 cup heavy cream
- to taste salt
- 1/2 cup cashew nuts
- 1/2 cup chopped tomatoes
- 2 teaspoons chopped green chilli
- 1 teaspoon Kashmiri red chili powder
- 4 tablespoons vegetable oil
- 3 whole green cardamoms
- 1 inch pieces of cinnamon sticks
- 1 cup sliced onions
- 1 teaspoon chopped ginger
- 1 teaspoon chopped garlic
- Fry Papad
- 2 pic of papad cut into pieces
- as required Oil for fry
Steps to make Lunch Thali
- Rice-boil the water than add washed basmati rice and stir well, cooked for 10-15 mint. When cooked well than add lemon juice (it's optional). Now plane rice ready.
- Mix Veg Daal- in cooker add washed tuvar daal, now add water as needed, add salt, turmeric powder, chopped veggies and cover it and cook it on medium flame 2 whistle. After than in tadka pan add 1tsp oil to heat, add cumin seed, coriander leaves and saute for 2 mint, than pour it into cooked daal. Mix well. Now mix veg daal इस ready to serve.
- Aloo Bhujiya- heat the oil in kadhai, add thin sliced cut potatoes, add salt, turmeric powder, red chilli powder and mix well.fry Potatoes in deep fry for 5 mint.cook well. It's ready to serve.
- Aloo-Govi Masala :- in a pan heat the oil, add chopped onion and saute till light pink, add ginger garlic paste and saute for 2 mint. Now add boiled potatoes, cauliflower, tomato and mix well. Than add salt, turmeric powder, masala (coriander, cumin, black pepper powder, red chilli powder) mixed well. Add some water to cook well for 10-15 mint. After gravy looks perfect and cooked well garnish with coriander leaves.its ready to serve.
- Methi Matar Malai :- Heat 5-6 cups of water in a large pot over high heat and when it comes to a boil, add chopped methi leaves and peas and cook for 2 minutes. Drain the water and run the leaves under tap water to stop the cooking process. Drain and keep aside.
- Heat 3 cups of water in the same pot over high heat. When it comes to a boil, add onion, ginger, garlic, cashew nuts, tomatoes, and green chilies and boil for 5 minutes. Drain and keep aside.Add the boiled onion-tomato mixture to a blender along with ¼ cup water.Blend to make a smooth paste.
- Make The Curry- Heat vegetable oil in a medium pan over medium-high heat.
Once the oil is hot, add whole green cardamoms and cinnamon stick and fry for 3-4 seconds. You can crush the cardamoms and cinnamon lightly for a more intense flavor.
Add the onion-tomato paste to the pan and fry for 3- 4 minutes on medium heat. Keep stirring while frying. - Now add salt, Kashmiri red chili powder, and garam masala powder, and cook for a minute.
Add 1 cup water and cook for 2-3 minutes.
Add the cooked methi and peas to the pan and cook for 2-3minutes.Now add heavy cream and sugar and cook for a minute.Add lime juice and mix well. Garnish with heavy cream swirls. Serve and enjoy. - Fry papad : heat the oil and fry papad both side.
