  2. 1 cup gram flour (besan)
  3. 1/2 Tsp Celery (Ajmo)
  4. According to taste Salt
  5. Pinch baking soda
  6. As needed Water
  7. To make the potato mash:
  8. 5-6 Medium size boiled mashed potatoes
  9. 1.5 Tbsp Oil
  10. 1/2 Tsp mustard seeds
  11. 1/2 Tsp cumin seeds
  12. Pinch Asafoetida
  13. 1 Tsp Roasted ginger
  14. 1 Tsp Finely chopped green chillies
  15. 1 Tbsp Finely chopped garlic
  16. 1/4 Tsp Turmeric
  17. 1/2 Tsp Red chili powder
  18. 1/2 Tsp spices
  19. 1 Tsp Lemon juice
  20. according to taste Salt
  21. 2 Tbsp Chopped coriander
  22. To make the vada:
  23. Prepared batter
  24. Prepared Potato Mash Balls
  25. Oil as required for frying
  26. To assemble the vada pav:
  27. Paav
  28. Paav prepared
  29. Green chutney
  30. Dry garlic chutney
  31. green chillies

Steps to make Vada pav

  1. To make the batter:
    Take gram flour in a bowl, add hand-ground flourcelery, salt to taste, pinch of baking soda and water as required to prepare a medium thick batter. This batter has to be covered and kept aside for fifteen to twenty minutes.
  2. To make potato mash:
    Heat oil in a pan, add mustard seeds, cumin seeds, asafoetida, ginger, chillies, and garlic and saute well. Then add mashed potatoes with turmeric and red chilli powder.
  3. Now add garam masala, lemon juice, salt according to taste and chopped coriander and mix everything properly. Once this dough is ready, its balls are to be made.
  4. To make Vada:
    Heat oil as required for frying, dip the prepared potato balls in the prepared batter and fry in this oil to prepare Vada.
  5. To assemble Vada Pav:
    Cut the pav in the middle and apply green chutney on both sides. Now put a dry garlic chutney on it and put the prepared vada in between it and can be served hot with fried green chillies.
  6. So here Mumbai famous street food Vadapav is ready.
