- For Dough
- 500 gms Wheat flour -
- 3/4 cups Water
- 1 tsp Salt
- 1 tsp Carom seeds (Ajwain)
- For Potato masala
- 8 Boiled potatoes medium size -
- 1 tsp salt
- 1 tsp Turmeric powder
- 1 tsp kashmiri red chilli powder
- 1 tsp crushed Carom seeds
- 1 tsp Cumin powder
- 3 Green chillies finely chopped
- 2 tsp Mint leaves finely chopped
Steps to make Aloo Paratha
- Lets prepare dough..
For this mix all dry ingredients well and then add water gently to form a semi hard dough (how to know - Just roll a ball from dough when it is hard enough and if you dont see any cracks, its perfectly done see pics below).


- Sprinkle few drops of water and keep aside covered for 15 to 20 minutes


- While our dough is resting, lets prepare potato masala for filling.
- Take boiled potatoes and break them into small chunks as below. Do not mash them


- Add to the broken potatoes, all dry masalas, green chillies, mint leaves, salt and carrom seeds

- Just give a mix to combine all ingredients. Here we have the potato filling ready.


- Lets roll the parathas....
Once the dough is rested, take it out and give a firm knead for 20 to 30 seconds.


- Now prepare a lemon sized ball from the dough. Take one ball, dust with wheat flour and then roll to a roti of about 2 to 3 inch diameter.



- Apply oil to on side of the roti and spread well.


- Keep 1 tbsp of Potato filling and wrap the roti to make a ball again.


- Now with your finger gently press the ball to release any air pockets and evenly spread the potatoes towards side.

- Dip the ball into flour and then start rolling but very firmly. First tap firmly for 3 to 4 times and then begin rolling from centre toward edges at first and then roll reverse from edges towards side until the paratha takes its shape with even thickness and size.



- Heat a tawa and place the paratha face down side st first and roast for 2 minutes.


- Flip over the side and cook on medium flame for 2 minutes

- Apply oil on the face and flip over.
Keep pressing the paratha with your spatula in a sprial motion.

- Now add oil to the other face and flip over and cook for 1 minute giving a gentle press with your spatula in a spiral motion.



- Here, your first paratha is done. Repeat same with rest of the dough and filling and prepare parathas.




- Serve parathas with any dip or sauce of your choice. I usually prefer to eat with curd or ketchup or simply with masala tea. You may also serve it with any Veg or Non veg gravy of your choice.
Today I made an Egg Dip and hence serving parathas with Egg dip.
