  1. 3 cups Whole wheat flour
  2. 1 cup Maize flour
  3. 1/2 cup Curd
  4. 1/2 tsp Baking soda
  5. as per taste Salt
  6. 2 tsp dry "Chaman" aam achar masala
  7. 2 tsp melted desi ghee for cooking
  8. 2 tbsp Desi ghee for kneading the dough
  9. 1 cup finely chopped fresh washed methi
  10. 1/2 tsp turmeric powder
  11. 1 tsp chilli powder
  12. 1/2 tsp carrom seeds
  13. 1 tsp coriander powder
  14. 2 big boiled potatoes

Instructions to make Baked Methi Baatis

  1. Wash 1 cup methi, toss it in the hot kadhai with very little oil till it gets wilted. This will take two to three minutes.Cool it. Now mix in wheat flour, maize flour, salt, turmeic powder, coriander powder, red chilli powder, carrom seeds, methi leaves, grated potato, baking soda and desi ghee.
    Add in little diluted curd, and make a smooth dough, if required, use little warm water to knead. Apply little melted ghee on the dough to make it smooth. Keep it covered for 10 minutes.
  2. Take a heavy bottom Kadhai and heat it. If using oven, pre-heat it at 190 degree for 10 minutes. Now make a ball, of size little bigger than a lemon. Flatten it, in your palm, apply melted ghee, spinkle some dry wheat flour and spread some achar masala, and roll it round, we do for stuffed paranthas. Flatten this ball a bit, like you do for making kachori. Sim the gas. Keep these baatis in karahi, one by one. Simmer the gas, cook the baatis, uncovered, for 5-7 minutes. then turn them and cook.
  3. Repeat the steps so they get cooked from both sides. Apply ghee on them over.cover them. If baking them in oven, line them in a greased tray. after cooking them for 5-7 minutes, follow the same method as done for karahi. these will take 30 minutes. As soon batatis are done and are still hot, dip them in piping hot ghee and pull them out from ghee. this will give a good shine to baatis. if you do not wish to dip them you may simply glaze them melted ghee with brush.
  4. Enjoy these baatis with chatpati aam chunda. You have a good snack with tea.
