- 2 tbsp coriander chopped
- 2 slit green chillies
- 2 tbsp refined oil
- 1 tsp ghee
Instructions to make Coconut Egg Bhuna Masala
- Make a smooth paste of chopped coconut, sesame seeds,whole garam masala,fennel seeds and malai,adding little water for grinding in a blender jar.Hard boil eggs,peel and make slits on them for easy penetration of masala.Assemble all dry and wet ingredients alongwith chopped onion.



- Heat oil in a non-stick pan.Smear turmeric and salt on eggs.Fry them till light golden colour.Add ghee to the remaining oil and sprinkle cumin seeds.When they splutter, fry onion till light brown.Add ginger garlic paste,salt and sugar to taste.Fry few minutes till there is no raw smell. Add the ground coconut paste alongwith malai.Also add coriander powder,turmeric, red chilli powder and malai.



- Add eggs and fry the masala till oil leaves sides.Add a cup of water or adjust gravy according to need.Boil for 3-4 minutes in medium flame,till desired consistency is reached.The texture should be thick and creamy.


- Sprinkle garam masala and garnish with chopped coriander, slit green chillies and chilli flakes.Serve hot with phulka,tandoori roti,naan or with jeera rice in lunch or dinner.
