  2. 1.5 cups Maida
  3. 1/4 tsp carrom seeds

  22. 1 tsp red chilli powder
  23. 1/2 two turmeric powder

Steps to make Jodhpuri style Onion Kachori

  1. For Dough - in a bowl add Maida, carrom seeds, oil, and salt, and mix well to get a crumbly texture. Add adequate water slowly to make a soft dough, set aside, grease, and keep it covered by a damp cloth for 30 mins.
  2. For Kachori Masala - in a pan heat coriander seeds, fennel seeds, cumin seeds, cloves, and whole black peppercorns and roast for 2 mins, set aside to cool, and add to a blender to coarsely grind, set aside.
  3. For stuffing - boil potatoes and coarsely mash. Slice onions.
  4. In a pan heat oil and add Kachori Masala and roast for 1-2 mins, add onions and cook for 1-2 mins, add chopped green chilies, and ginger, and mix well. Add chopped coriander leaves, garam masala powder, Amchur powder, red chili powder, and turmeric powder. Mix very well.
  5. Add roasted Chana Dal powder and mix well. Add coarsely mashed potatoes and fry for 2-4 mins. Set aside and cool.
  6. For Kachoris - make balls and press between your palm. Press the sides and add 1 Tbsp of the Kachori filling, fold all together like a Momo. Close the center well, press the ball between your palms again, and press a few times to make a bigger size like a Kachori. Set aside and complete the batch
  7. In a deep bottomed wok heat oil and gently add the Kachori’s, on medium-low flame fry each side well till golden in colour, set aside
  8. Plate with pickle and watch your kid enjoy his lunch.
